See those burnt beauties? Those could have been my perfectly roasted brussel sprouts today. But the difference between roasted and burnt to oblivion is apparently around 10 minutes. I used this roasted brussel sprout recipe from Epicurious and thought it would be pretty top-notch. I followed the recipe perfectly and then when the oven buzzer went off I pulled out a tray of Kingsford. The result: no brussel sprouts tonight. Grrr.
Next time I’ll try the other popular method: blanching.
